Makes Coffee was founded by Danny Hyams originally under the name Phuket Coffee Lab. Danny’s coffee journey began long before his first cup. As a kid, he loved watching his parents prepare their morning percolated coffee—the aroma, the ritual, the quiet rhythm of it all. When he finally tasted coffee at 18, it quickly became part of his life.
What started with instant and Turkish coffee soon grew into filter brews, plungers, stovetop percolators, and eventually his first espresso machine as Australia’s third-wave coffee movement took off. He spent countless hours learning how to pull the perfect shot, trained as a barista, and embraced the craft at home—even while working as a lawyer.
Everything changed in 2008 when he moved to Phuket. He left his legal career behind and bought a second-hand roasting machine on impulse. That moment turned a hobby into a calling. His goal became clear: to bring a Melbourne-style specialty coffee experience to Phuket—not only exceptional coffee, but the warmth, atmosphere, and community that come with it.
Soon after, he began what has now become a decade-long partnership with the Akha farmers of Doi Pha Hee. Their dedication and unique high-quality beans have shaped his coffee from the very beginning, and he is proud to support and work closely with them. Each year, he travels to meet with the farmers and continues to strengthen their relationship with a shared love of exceptional coffee.
